Sneezing is a tier 2 symptom. It causes disease-laden fluid to fly everywhere. It increases infectivity rates by a small amount, while barely increasing severity. This makes it a useful symptom for increasing infectivity in the higher difficulties except for Mega-Brutal (where you can be detected without any severity), while producing little chance of detection.

Sneezing is the irritation of your nasal passages, and then the ejection of whatever was in your nose. Just like in Plague Inc, Sneezing may spread Pathogens that were within you.
